A simple and extremely tasty dish. I’ve left portions vague on purpose – use what you like – as much as you like. All about the flavours.
Prawn and Chorizo Linguine
A great pasta dish. Big flavours, very quick and easy to make.
- Prawns – as many as you want
- Chorizo (diced, as much as you want)
- Mushrooms (sliced, as many as you like)
- Spring onions (2-3 per head)
- 1 tub single cream or crème fraîche
- Juice of 1 lemon or lime
- Put the linguine on to boil in slightly salted water
- In a large pan, heat the oil and add chorizo
- Cook for a few minutes until oil is coloured
- Add garlic and onions and cook until softened
- Add mushrooms and stir
- Add cream and keep stirring
- Add juice of lemon or lime and stir
- Linguine should be ready
- Drain the pasta and add to pan
- Stir everything together well
- Serve with parmesan and black pepper
The recipe can easily be adapted to other types of pasta. Pimp it up with cherry tomatoes, spring onions etc….
