Mexican Lasagne

Mexican lasagne is seeing something of a surge in interest. A simple search on Google will bring up a number of results – many of which look and probably taste the part. Cuban Picadillo

Simon’s warming one-pot Cuban dish with minced beef, cinnamon, olives and raisins

Ultimate Superfood Salad

Densely packed with vitamins A and C, folate, potassium as well as fiber. The salad itself is made from kale, red cabbage, bell pepper, carrots, broccoli, walnuts, avocados tossed with ginger-lemon dressing. Try it as a refreshing entrée salad or serve a smaller portion as a side.

Wild Mushroom Fricassée

A nice wee mushroom dish. Another dish you can customise depending upon what’s in season or available. Keep it relatively simple though to enjoy the taste of the different mushrooms. A fast and delightful mushroom dish.
