Ingredients

wild mushrooms

grams
unsalted butter

shallot
200
grams
tomatoes
chopped

clove
garlic

parsley
1
sprig tarragon
2
sprigs chervil
1
glass white wine
dry
Sea salt and black pepper to taste

tbsp
lemon juice
Instructions
Finely chop the shallot
Finely chop the tomato
Roughly chop the parsley, tarragon and chervil
Heat the pan to a medium heat
Melt butter until it foams
Add the shallot and garlic and cook for 30 seconds
Increase the heat then add mushrooms - cook for 1 minute
Add wine and cook for a further minute
Add herbs, lemon juice and tomatoes
Season to taste
Serve with good bread
