As usual, simple and very tasty. We through this together on a Friday after a hard week. Easily put together and full of flavour.<\/p>\n<p><!--WPRM Recipe 911--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Buffalo Chicken and Potato Casserole<\/h2>\n<p>\t<img decoding=\"async\" class=\"wprm-fallback-recipe-image\" src=\"http:\/\/childofthemist.net\/blog\/wp-content\/uploads\/2016\/11\/buffalo-150x150.jpg\"\/>\t<\/p>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<ul>\n<li>4 chicken breasts cut into chunks<\/li>\n<li>8 medium potatoes (cut into small cubes)<\/li>\n<li>? cup olive oil<\/li>\n<li>1 tsp salt<\/li>\n<li>1 tbsp fresh ground pepper<\/li>\n<li>1 tbsp paprika<\/li>\n<li>2 tbsp garlic powder<\/li>\n<li>6 tbsp hot sauce<\/li>\n<li>2 cups grated cheese<\/li>\n<li>1 cup cooked (chopped bacon\/lardons)<\/li>\n<li>1 cup spring onions chopped<\/li>\n<li>blue cheese\/ranch dressing<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>In a large bowl mix the oil, salt, pepper, paprika, garlic powder and hot sauce to make a marinade.<\/li>\n<li>Add potatoes and stir well to evenly coat the potatoes with the marinade.<\/li>\n<li>Heat oven to 250C \/ 500 F (yes, that hot!)<\/li>\n<li>Lay potatoes on a greased baking dish (leave any excess marinade in the bowl)<\/li>\n<li>Cook in hot oven for 25 &#8211; 30 minutes stirring after about 15<\/li>\n<li>Add chicken to the marinade and leave marinate as the potatoes cook<\/li>\n<li>When potatoes have cooked, remove from oven and lower temp to 200C \/ 400F<\/li>\n<li>Place the raw chicken on top of potatoes and cook for 20 minutes<\/li>\n<li>In a large bowl, mix cheese, bacon and spring onions<\/li>\n<li>Cover the chicken with the mixed topping and return to the oven for 5 \/ 10 minutes until cheese has melted (or grill to make it crispy)<\/li>\n<li>Drizzle the ranch or blue cheese dressing over and serve<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<p>You&#8217;ll quickly see how the portions can be adapted to suit your needs.<br \/>Don&#8217;t scrimp on the hot sauce, it won&#8217;t burn your mouth off, it&#8217;ll just give a nice flavour to the finished dish.<\/p>\n<\/p><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe-->&nbsp;<\/p>\n<p><a href=\"http:\/\/childofthemist.net\/blog\/wp-content\/uploads\/2016\/11\/buffalo2.jpg\"><img loading=\"lazy\" decoding=\"async\" width=\"338\" height=\"600\" class=\"aligncenter wp-image-475 size-full\" alt=\"Potatoes in marinade\" src=\"http:\/\/childofthemist.net\/blog\/wp-content\/uploads\/2016\/11\/buffalo2.jpg\" srcset=\"http:\/\/childofthemist.net\/blog\/wp-content\/uploads\/2016\/11\/buffalo2.jpg 338w, http:\/\/childofthemist.net\/blog\/wp-content\/uploads\/2016\/11\/buffalo2-300x533.jpg 300w, http:\/\/childofthemist.net\/blog\/wp-content\/uploads\/2016\/11\/buffalo2-169x300.jpg 169w\" sizes=\"auto, (max-width: 338px) 100vw, 338px\" \/><\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; &nbsp; This is a nice versatile dish.
