At first we wondered how it would turn out&#8230; all seemed a bit weird but it was well worth the effort. It could easily be customised to your own taste, just make sure there&#8217;s sufficient liquid in there to cook the rice but don&#8217;t over-do it. Give it a go&#8230;.. it&#8217;s a cracker.<\/p>\n<p><!--WPRM Recipe 914--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Spanish Rice Bake<\/h2>\n<p>\t<img decoding=\"async\" class=\"wprm-fallback-recipe-image\" src=\"http:\/\/childofthemist.net\/blog\/wp-content\/uploads\/2016\/11\/spanishrice01-1-150x150.jpg\"\/>\t<\/p>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<ul>\n<li>400 g lean steak mince<\/li>\n<li>1 finely chopped onion<\/li>\n<li>1 chopped green bell pepper<\/li>\n<li>1 can canned tomatoes<\/li>\n<li>1 cup water<\/li>\n<li>3\/4 cup uncooked long grain rice<\/li>\n<li>1\/2 cup salsa (jar or bottled is fine)<\/li>\n<li>1 teaspoon salt<\/li>\n<li>1 teaspoon brown sugar<\/li>\n<li>1\/2 teaspoon ground cumin<\/li>\n<li>1 teaspoon Worcestershire sauce<\/li>\n<li>1 pinch ground black pepper<\/li>\n<li>1\/2 cup shredded Cheddar cheese<\/li>\n<li>2 tablespoons chopped fresh coriander<\/li>\n<li>1 pinch of fennel seeds (optional)<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Preheat oven to 190 degrees.<\/li>\n<li>Brown the mince in a large pan over medium-high heat.<\/li>\n<li>Drain excess fat and transfer mince to a large pot over medium low heat.<\/li>\n<li>Stir in the onion, green bell pepper, tomatoes, water, rice, salsa, salt, cumin, Worcestershire sauce and ground black pepper.<\/li>\n<li>Let this simmer for about 30 minutes, stirring occasionally, then transport this to a casserole dish.<\/li>\n<li>Press down firmly and sprinkle with the shredded Cheddar cheese.<\/li>\n<li>Bake at 375 degrees F (190 degrees C) for 10 to 15 minutes, or until cheese is melted and bubbly.<\/li>\n<li>Garnish with chopped fresh coriander.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<p>The salsa can be mild, medium or hot depending upon how you like it.<br \/>Instead of water, try using chicken stock for extra flavour.<\/p>\n<\/p><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe-->&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is a truly wonderful and simple dish.
