A simple search on Google will bring up a number of results &#8211; many of which look and probably taste the part.<br \/>\nThis version is inspired by <a href=\"http:\/\/twistedfood.co.uk\/mexican-lasagna\/\">Twisted Food&#8217;s<\/a> version but with my own subtle tweaks.<\/p>\n<p>Easy to make, cheap and tasty&#8230;. just like good food should be&#8230;.. enjoy!<\/p>\n<p><!--WPRM Recipe 890--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Mexican Lasagne<\/h2>\n<p>\t<img decoding=\"async\" class=\"wprm-fallback-recipe-image\" src=\"http:\/\/childofthemist.net\/blog\/wp-content\/uploads\/2016\/08\/mexicanlasagne-150x150.jpg\"\/>\t<\/p>\n<p class=\"wprm-fallback-recipe-summary\">\n\t\tA take on the classic lasagne with a Mexican twist\t<\/p>\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For the mince sauce<\/h4>\n<ul>\n<li>500 g Scottish steak mince<\/li>\n<li>1 white onion<\/li>\n<li>1 stick celery<\/li>\n<li>3 cloves garlic<\/li>\n<li>1 sachet taco seasoning<\/li>\n<li>1 tin chopped tomatoes<\/li>\n<li>1 tsp fennel seeds<\/li>\n<li>1 tsp chilli powder<\/li>\n<li>1 tbsp oil<\/li>\n<\/ul>\n<h4>For the lasagne<\/h4>\n<ul>\n<li>2 bell peppers (different colours)<\/li>\n<li>2 to rtilla wraps<\/li>\n<li>1 packet tortilla chips<\/li>\n<li>2 spring onions<\/li>\n<li>6 &#8211; 12 cherry tomatoes<\/li>\n<li>Cheddar cheese<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Heat oil in a pan. Brown the mince and add onion and garlic.<\/li>\n<li>Add taco seasoning, celery, fennel seeds and chilli powder.<\/li>\n<li>Stir and add chopped tomatoes.<\/li>\n<li>Add salt and pepper to season.<\/li>\n<li>Continue to stir and cook until required consistency is reached.<\/li>\n<li>In a bowl, build layers of mince, peppers, tortilla wraps to form the lasagne.<\/li>\n<li>On top, spread tortilla chips, spring onions and cherry tomatoes.<\/li>\n<li>Cover with grated cheese and bake at 180\u00b0 for 20 minutes.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Mexican lasagne is seeing something of a surge in interest.
