World Famous Spaghetti

This dish is a firm favourite as well as being cheap and easy to make. It’s based upon the classic Italian spaghetti aglio e olio but has a couple of wee tweaks thrown in just to enhance the already superb flavours. Some chopped bacon or pancetta adds a hint of salt as well as a bit texture. The spring onions and parsley enhance the classic oil and chilli substance of the dish. Throw it together and tweak it as you like…. enjoy!

My World Famous Spaghetti

A variation on the classic spaghetti aglio e olio but tweaked in my own particular way... enjoy!

Ingredients
  

Per person

  • 3 rashers bacon
  • 3 cloves garlic
  • 1 chopped chilli
  • 2 spring onions
  • 100 g spaghetti
  • Olive oil
  • 1 small bunch chopped parsley
  • Parmesan cheese

Instructions
 

  • Put spaghetti into boiling salted water
  • Heat the oil and add the bacon
  • Add the chilli, garlic and spring onions
  • Add half the parsley
  • If mixture becomes a bit dry, add some water from the spaghetti
  • When spaghetti is al dente, drain and add to pan
  • Toss all ingredients together
  • Garnish with parmesan and serve
