Wild Mushroom Fricassée

A nice wee mushroom dish. Another dish you can customise depending upon what’s in season or available. Keep it relatively simple though to enjoy the taste of the different mushrooms.

Wild Mushroom Fricasée

Ingredients
  

  • 400 grams wild mushrooms
  • 30 grams unsalted butter
  • 1 shallot
  • 200 grams tomatoes chopped
  • 1 clove garlic
  • 10 grams parsley
  • 1 sprig tarragon
  • 2 sprigs chervil
  • 1 glass white wine dry
  • Sea salt and black pepper to taste
  • 1 tbsp lemon juice

Instructions
 

  • Finely chop the shallot
  • Finely chop the tomato
  • Roughly chop the parsley, tarragon and chervil
  • Heat the pan to a medium heat
  • Melt butter until it foams
  • Add the shallot and garlic and cook for 30 seconds
  • Increase the heat then add mushrooms - cook for 1 minute
  • Add wine and cook for a further minute
  • Add herbs, lemon juice and tomatoes
  • Season to taste
  • Serve with good bread
